Cask Ale at Nod Hill

At Nod Hill, we are proud to offer English-style cask ale. We are also proud to be one of less than 20 breweries in the US with Cask Marque Accreditation.

But why are cask ales so special?
- Natural carbonation = less gas, gentler bubbles, easier drinking
- Cellar temperature = more expression of flavor and aroma
- Venting = slight oxidization that subtly changes the beer’s flavor over the days each cask is pouring

The process of creating cask beer is also quite distinct. When beer is finished fermenting but has not yet been carbonated, we transfer it to a cask along with a small quantity of sugar and yeast. This kicks off a secondary fermentation process where the yeast consumes the sugar and creates CO2 as a byproduct.
Once the beer becomes naturally carbonated, we place the casks in a temperature-controlled space (around 50-55°F) and vent the tops of the casks to allow excess CO2 to be rel
eased. Then they are connected to a beer engine & hand pump to be served for your enjoyment.
