Tasting Notes: A truly tart ale brewed with copious amounts of malted and unmalted white winter wheat. A light touch of lactose provides balance against bright acidity. Perfectly pink, purple in color with a fruit packed palate from hibiscus flowers used in the kettle and mango and tangerine puree during fermentation.

RIVERSONG

Oak-aged Wild Ale // 6% ABV

This beer was brewed in Jan ’22, then rested overnight in our coolship located outside the brewery on the banks of the Norwalk River. As the wort cooled, it was naturally inoculated with airborne microbes distinct to our riverside locale. The next morning, we transferred this roiling liquid to oak wine barrels, allowing it to ferment, condition & rest until the following winter. Checking in from time to time, we found one of these barrels to be particularly expressive & complex, and bottled it as it was with no blending. Riversong then rested in bottles for a further ten months, letting its intriguing flavors coalesce and lively carbonation develop. The result is pleasantly barnyard-y, full of lemony tart sour candy notes, and complex but highly refreshing.

Featured Ingredients: Mosaic, Amarillo, Citra hops, Pilsner malt, Flaked Oats, unmalted Wheat, House yeast.

Tasting Notes: Secret Door peeks into a classic Mosaic and Amarillo hop combo, with a few new friends tagging along. Fresh-cut pineapple and grassy aromatics lead the way, chased by grapefruit, lemon, and lime oils running all the way down. Hints of strawberry and dragonfruit flesh keep things weird in the best way. Medium-bodied, soft, and slick. Grab some eye drops and a bag of snacks—this one’s a doozy.
