We had some beautiful weather for our “Where the Gold At” maibock release party for @newsylumbrewingco and @nodhillbrewery yesterday. Thank you all for coming out to support, we will always take an excuse to connect with our brewery friends and this “Beirstacheln” event was a great time!

(“Bierstacheln” is a traditional German technique where you plunge a hot “Stachel” (metal rod) into a cold beer to caramelize the residual malt sugars and create a warm, creamy, toasted marshmallow-like head on the beer. Quite delicious.)

Nod Hill Brewery received an award at the NERAX Cask Festival @neraxcaskfestivals in Boston this weekend - a one-off batch of Geobunny (conditioned on locally-grown Buddha’s hand and vanilla beans) took gold in the American Cask Beer IPA Category!

CAMRA, the Campaign for Real Ale, usually presents these prestigious awards at the Great British Beer Fest in London. Although that event was canceled this year, we will continue our involvement in meaningful events like these which blend ideas across the pond (US and the UK).

We also strive to keep the tradition of cask ales ever flowing in our taproom - come by any time and see what’s on cask!

The makings of a grodziskie.

Part 1 - The Nod Hill team took a trip up to Thrall Family Malt @thrallfamilymalt to meet up with Spencer Thrall for a tour of CT’s first modern malt house and to pick up some high-quaility locally-grown wheat for this project.

Part 2 - We made our way over to Hindsight BBQ in Waterbury to drop off the grains. Sampled beers, ate some amazing bbq, met some ducks, and hung out with the Hindsight pit masters while they smoked the grains.

Part 3 - Back at the brewery, we mashed in the smoked malt and our buds from Hindsight came by to assist with the brew. After the boil, we ran it into our coolship and let the wort rest for a couple of hours — a unique process historically used for cooling lagers — then fermented with a German Kölsch yeast.

Part 4 - The beer fermented for about 4 weeks, and then finally this week it was kegged and canned. We cracked open some cans to enjoy over at Hindsight, with friends and paired with some incredible food from their menu.

Retrospekt comes in at a super sessionable 3.5%, with a firm bitterness and light herbal tea-like notes from Perle and Tettnang. The smoke stays pretty restrained, but still carries a distinct depth from the BBQ pits. This unique beer has clean oak and light campfire notes, with a crisp, dry finish and really bright, almost sparkling carbonation. There’s a little fresh grain character up front which snaps off quick with pleasant hoppy bitterness.

We spent the night around their pits, custom-smoking Connecticut-grown wheat from @thrallfamilymalt . Retrospekt maintains a firm bitterness with light, herbal notes, and a crisp, dry finish, with notes of clean oak and a restrained yet distinct smoke from the BBQ pits.

We have just kegged our Newsylum x Nod Hill Brewery collab beer, a German Maibock with a honey-like gold caramelization. And it’s called 𝕎𝕙𝕖𝕣𝕖 𝕋𝕙𝕖 𝔾𝕠𝕝𝕕 𝔸𝕥 .

Newsylum will be hosting a release party on Sunday 3/29 at 1pm - and you’re all invited, so stop in!

Designed to be super sessionable with a biscuity, toffee-like malt character, but now with a revised hop schedule to bring out more of a tea-like herbal quality.

Extra Special Bitter (ESB) has a fun history because it was never originally designed to be it’s own a style. The ESB was a specific beer designed and released by Fuller’s Brewery in London in 1971. When this beer made its way to the states, American brewers assumed it was a style and not a specific beer name. And so it was that Fuller’s consequently created the style of Extra Special Bitter; highly sessionable, with a rich toffee malt, and rounded peppery hops.

This past week we added 300lbs of whole cherries from @woodlandfarmct on to a blend of mixed fermentation oak aged beers.

We sampled quite a few of our current barrel-aged beers to determine our next line of attack. After careful consideration, we decided on a blend of 3 oak barrels to condition on CT farm-grown cherries: a barrel of spontaneously fermented beer, a Belgian Trappist-inspired ale, and one of our barrels of wet-hopped farmhouse ales from our trip to @skaneateleshopfarm !

The beer will referment on cherries for the next 2-3 months, before bottling and kegging. Mixed-ferm beers take patience and time, but the flavor complexity they develop is well worth the commitment🍒🍻

At Nod Hill, we are proud to offer English-style cask ale. We are also proud to be one of less than 20 breweries in the US with Cask Marque Accreditation.

But why are cask ales so special?
- Natural carbonation = less gas, gentler bubbles, easier drinking
- Cellar temperature = more expression of flavor and aroma
- Venting = slight oxidization that subtly changes the beer’s flavor over the days each cask is pouring

The process of creating cask beer is also quite distinct. When beer is finished fermenting but has not yet been carbonated, we transfer it to a cask along with a small quantity of sugar and yeast. This kicks off a secondary fermentation process where the yeast consumes the sugar and creates CO2 as a byproduct.

Once the beer becomes naturally carbonated, we place the casks in a temperature-controlled space (around 50-55°F) and vent the tops of the casks to allow excess CO2 to be released. Then they are connected to a beer engine & hand pump to be served for your enjoyment.

Along with our classic English pub styles, we are excited to offer a cask version of Geobunny at this time. Stay tuned for some fun & interesting iterations of our flagship IPA on cask to complement our more traditional offerings!

Last week, a group of Nod Hill staff and brewers took a trip over to Branford to visit @newenglandbrewing ‘s new location. Greg Radawich, NEBCO’s director of brewing operations, brought us on a tour of the newly renovated brewhouse and shared some beers with us in their beautiful new taproom.

We are super excited to announce an upcoming project with Greg and his brew team on a unique beer that pushes some boundaries of style guidelines - be on the lookout for a new English-inspired beer with an American twist.

On Wednesday, our friends from @newsylumbrewingco came by for the afternoon to brew a kräusened maibock with us.

The maibock, hailing from Munich, is traditionally a strong, roasty, pale German lager meant to be enjoyed in the spring season (Mai literally meaning “may” in German). We boiled the first runnings to impart a deep honey-like caramelization in the finished beer.

Both Nod Hill and Newsylum are looking forward to sharing the product of this collaboration on draft in our taprooms in early April - just after the spring equinox.

On Wednesday, our friends from @newsylumbrewingco came by for the afternoon to brew a kräusened maibock with us.

Now that we are well & truly into winter, we are updating our operating hours a bit. Going forward, we will be closed on Tuesday evenings and opening an hour later (at 4pm) on Wednesdays & Thursdays.

Ronin 51 — Japanese-Inspired Rice Lager // 5% ABV
Created in collaboration with our friend and restaurateur Jeff Taibe of Bar Bushido, a traditional Japanese izakaya in Norwalk, CT, Ronin 51 is brewed with intention, restraint, and balance.

This super-dry, rice-forward lager is delicately spiced with sansho peppercorns added in the kettle, lending a subtle citrusy tingle and gentle herbal complexity. After fermentation, we infused the beer with fresh yuzu zest and juice, giving the aroma a bright, lively lift without overpowering the clean, ultra dry base.

The result is a refreshing, modern take on a Japanese rice lager—clean, ultra dry, aromatic, and built to pair beautifully with the creative offerings at Bar Bushido, where Ronin 51 serves as the official house beer.

Fresh off being voted Best Upcoming Restaurant in CT at the @ctrestaurantassoc awards, there’s no better time to visit Bar Bushido and experience their creative take on Japanese food while enjoying a few pours of this rice lager.

Join fiddler & accordionist Damien Connolly from 6-9pm for an evening of communal music-making, joyful melodies, and the one-of-a-kind atmosphere that only happens at a session.

Melody musicians welcome, accompanists by invite only…all others welcome to come enjoy the music over a few pints.
